Not just because we love prawns but because Noosa offers fabulous and fresh prawns. We get ours from the Spanner Crab guys at the Farmers' Markets - always fresh and always cheaper (two major components to really enjoying a meal). So here is how we do ours for four people (that includes two large eating and prawn loving teenagers). Ingredients:
Peel and de-vein prawns. Place in a bowl with coarsely chopped garlic. Cover and let sit in the refrigerator till just before cooking. Heat butter in wok or frying pan. Toss in the prawns arul cook quickly, taking care with the temperature. Too high may burn the garlic and make it taste bitter, too low and the prawns will turn rubbery. Keep tossing and turning the prawns while cooking for about 3-4 minutes. Serve immediately with a fresh, organic green side salad.
Try adding a teaspoon of coconut oil and/or chopped fresh chilli.
